Continued arbitrary restrictions on businesses operating in Norway during the pandemic has led to innovation - innovation to circumvent those restrictions and continue serving customers. Image if they were able spend time innovating on delivering better products and services instead.


Restaurants are not allowed to be open, but this coffeeshop realized that the law is written so that takeout is like groceries which are still allowed to be sold. Under more normal times this meant they listed two prices, depending on where you ate in (taxed at the service rate) or took out (taxed at the food rate).


Stores that do not sell food are not allowed to be open, but this store discovered there is a loophole for online businesses that have a pickup location. This is now a pickup location rather than a store. Hairdressers, despite have much more physical contact that booksellers, are considered an essential business and remain open so they also could have started cutting hair and sold books on the side. A number of stores that happened to sell food have been able to remain open even though that's not their main business.
