Cultivation of Vitis vinifera takes place in French Appellations d'Origine Contrôlée (AOC), a government mandated regulation of the terrior, in Champagne. Three main grapes are used in the production of Champagne: Pinot Noir, Chardonnay and Pinot Meunier. The region has fought fiercely around the world to protect its name which is elsewhere applied indiscriminantly to sparkling wines.
