This month I'm going to write about some recipes that work and some recipes that don't as I experiment with a month of meatlessness. It's always best to share a meal with someone if you and this meal serves two.

98% of this meal is cauliflower so it's important to start with a good head. Once its been deleafed and washed place it in a baking pan and surround it with a cup of water. Preheat the oven to 225°C (425°F). How you season it is up to you, but here's a regime that was well received last night:

drizzle olive oil
drizzle honey
one fresh garlic clove, pressed
a little cinnamon
a little salt
a little pepper
a little Sriracha

Cover and put it in the oven for about an hour, or until it's easy to put a knife all the way to the center. If looks dry reapply a little oil. Then cook for another half hour in the oven until it's nicely browned. Serve it up with tahini on top.
