Buttermilk Pancakes

This is one of Ane's favorites and is guaranteed to brighten any morning you make it for someone you love.

Ingredients:
  • 500 ml flour (hvetemel)
  • 2 tsp bakke pulver
  • 1/2 tsp salt (just a dash really)
  • 2 tbsp sukker
  • 1 tsp vanilje sukker
  • 500 ml buttermilk (kulturmelk)
  • 2 eggs
  • optional: blueberries, raspberries, or your favorite fruit

First mix the dry ingredients thoroughly in a bowl. Next mix in the eggs and buttermilk, but don't be so thorough (leave some clumps). Let the mixture stand for about ten minutes while you get the pan or griddle ready by melting some butter in it. Ladle out the batter into the pan and (optionally) drop some berries into the batter on the pan. Wait for the edges to look solid before flipping. Serve with butter and powered suger or syrup.
